I’ve seen this gluten-free recipe on several Hungarian websites, so I thought I’d give it a try. It worked so well that I practically have it for breakfast all the time, and it has been really helpful for weight loss too.
Ingredients:
1 egg
1 tablespoon of psyllium husk powder*
salt
Possible additional ingredients: nuts, finely chopped onions, herbs, cheese, ham, etc.
For a sweet version: sweetener, cinnamon, fruits, etc.
*First, a few words about psyllium husk: as far as I know, it is available in organic and health food stores throughout Europe, and many supermarkets also carry it. I’m not sure about the international situation, but you can definitely find it on eBay and Amazon.
It’s gluten-free, incredibly high in fiber, which promotes healthy digestion, has a positive effect on the cardiovascular system, and helps regulate blood sugar levels. Moreover, it’s great for losing weight. It also helps with my acid reflux. Important! While fiber is healthy, you need to drink plenty of fluids along with it! Lots of fiber + lots of fluids = healthy digestion.
The preparation is incredibly simple. Crack the egg into a bowl, add the remaining ingredients, and then cook it in a frying pan. (If you’re using a non-stick pan, you don’t need to use oil, but if your pan isn’t non-stick, lightly grease it with a little oil before cooking. I have a small pan, as seen in the photo.)
First, cook one side, then the other. I usually sprinkle the seeds on top when one side is already cooking in the pan. Interestingly, the “bread” rises nicely due to the psyllium husk. Once it’s done, you can eat it as a sandwich and add cheese, salad, meat, etc. If you cook it thin, it can also work as a tortilla. Moreover, instead of using dough, it can also be eaten (e.g., with Bolognese sauce).
