This is a very simple, quick, and delicious cookie recipe that doesn’t require any special gluten-free flour mix – just rice flour.
Ingredients:
270 g rice flour is approximately 1 ¾ cups rice flour
120 g butter (or margarine) is approximately ½ cup butter (or margarine)
1 large egg
80 g sugar is approximately ⅓ cup sugar
1 small pinch of salt
1 tablespoon lemon juice
1 teaspoon lemon peel
a little vanilla
Let’s prepare a food cutter; it’s best to make the dough with it (the butter won’t melt from the warmth of our hands). Put the flour and butter into the cutter and turn it on. Once it’s thoroughly mixed, add all the remaining ingredients except for the egg. I personally knead in the egg at the end, by hand. Just a few motions are enough. Place the dough in the refrigerator for fifteen minutes.
After fifteen minutes, cut out shapes from the dough and press on any desired pattern, if you like. I wanted to. When it’s done, place it on a baking tray lined with parchment paper. Put it in the preheated oven (190-200 degrees Celsius – 350-370 Fahrenheit) and bake until it’s done in a few minutes.
It’s delicious on its own (for example, with tea or coffee), but it’s also really good if we spread jam on one and press another one on top. Life is beautiful in pairs. In pairs and with jam 🙂 If we make it this way (with jam), it will become completely soft by the next day.
